Tofu with Coconut Rice & Veggies

Tofu: Blot tofu with a paper towel to get it as dry as attainable. Minimize it into cubes, then toss in soy sauce. Bake the tofu on 425 for 20-25 minutes OR airfry on 400 for 12-15 minutes. You might deff substitute tofu w shrimp.

Rice: Mix 1 cup jasmine rice and 1 can coconut milk. Deliver to a boil in a small pot. Cut back warmth to low and simmer for 15-20 minutes.

Penut Sauce: Sautè sesame oil w garlic and ginger for a min. Add 1/four cup peanut butter, half cups water, 1/four cup soy sauce, a splash rice vinegar, a lil honey and a lil scorching sauce. Combine nicely and prepare dinner down for about 5 min.

Serve the tofu over rice together with your veggies of selection. I used cucumber and carrots. High with the peanut sauce and inexperienced onion!
