Peel butternut squash (I used three small squash), and reduce off ends. Reduce squash in half lengthwise, and spoon out all seeds. Reduce into chew sized items.

Combine three tbsp olive oil and three tbsp maple syrup. Coat squash with the liquid combination, then season with salt, pepper, and cinnamon.

Place on baking sheet. Roast on 400 for 20 minutes, shake them round, then bake for one more 15 minutes till fork tender.

Garnish with feta, contemporary parsley, and pomegranate seeds!!
