The prettiest butternut squash!! So yummy and extra importantly, fairly and festive 😏

Peel butternut squash (I used three small squash), and reduce off ends. Lower squash in half lengthwise, and spoon out all seeds. Lower into chunk sized items.

Combine three tbsp olive oil and three tbsp maple syrup. Coat squash with the liquid combination, then season with salt, pepper, and cinnamon.

Place on baking sheet. Roast on 400 for 15 minutes, shake them round, then bake for an additional 15 minutes till fork tender.

Garnish with feta, contemporary parsley, and pomegranate seeds!!
