The important thing to life is multitasking! I don’t have the time or vitality to organize lunch and dinner each day… Final night time, I made a giant pot of chili to final 3-Four dinners, and Mexican rice bowls for Four lunches.

I like to organize dinner and lunch with comparable elements so I solely have to purchase one set of things. The chili elements coincide with the Mexican bowl elements!

Right here’s what I do to make my chili: Sautee onion, celery, and carrots in a big pot- Season with salt and pepper. Add canned corn, canned tomato sauce, canned diced tomatoes, and cooked floor turkey (seasoned with taco seasoning). Subsequent, add 1 – 1 half of cup quinoa and 3-Four cups rooster broth. Convey to a boil, then simmer for 20-30 minutes. Add canned beans and taco seasoning. High with bitter cream, pico de gallo, Mexican cheese, and inexperienced onion!!

Whereas the chili is boiling, put together your Mexican rice bowls—Brown rice, floor turkey (cooked with taco seasoning), canned again beans, canned corn, pico de Gallo, and inexperienced onion!
