SUPER GOOD BUDGET FRIENDLY DINNER!!! Braised hen thighs in a wine/lemon sauce with carrots and mashed potatoes.

Peel and chop carrots, then pre-cook on a skillet with a little bit olive oil and water for about 5 min. Put aside.

Season hen thighs w salt, pepper, and paprika. Coat in complete wheat flour. Prepare dinner on the skillet over medium-high warmth in olive oil or butter for 2-Three min either side to get a superb sear.

Add carrots again to the skillet. Add 2 tbsp butter, 1/2-1 cup white wine, a splash of water or broth, 1/2 cup milk, and the juice of 1 lemon. Cowl and simmer for 10 min, till hen is cooked through and carrots are tender.

Serve with rice or mashed potatoes… Mashed potatoes: Chop potatoes into chunks, and boil for 10 min (till tender), add 2 tbsp butter, 1/2 cup milk, 1 cup plain Greek yogurt, and salt. Mash and serve!
