Slice pre cooked andouille sausage into chunk sized items. Warmth olive oil in giant pot. Brown sausage over excessive warmth till crispy and browned. Take away from pot and put aside.

To the pot, add diced yellow onion, celery, and carrots. Sauté till tender. Then add 2 chopped bell peppers. Sauté 2 min. Season w salt.

Add again sausage, chopped potatoes, 1 can diced tomatoes, rooster broth, and Italian seasoning. Deliver to a boil.

As soon as it involves a boil, flip to low and simmer for 15 min (till the potatoes are cooked).

Add just a few handfuls of kale, contemporary basil and parsley. Let kale wilt after which serve!!
