Rosemary & Lemon Roasted Rooster.

Take away the giblets and pat hen dry. Season with LOTS of salt and pepper. Stuff the hen with 1/2 lemon, rosemary, thyme, and garlic.

Chop a number of rosemary sprigs finely and place in a bowl. To that bowl, add lemon zest and a couple of tbsps room temp butter. Mash the butter with the rosemary and lemon till properly mixed. Rub the butter everywhere in the hen, then season once more.

Stuff the cavity of the chook w 1/2 lemon, garlic, and rosemary. Tie the hen legs collectively, then roast on 425 for 60-90 minutes. Take away the hen from the oven and let sit below foil for 20 minutes.

That is the juiciest and BEST roasted hen!! You can even roast carrots proper on the pan with the hen.
