Roasted Carrot & Potato Soup!

Wash, peel, and lower 8ish massive carrots. Drizzle w oil, season w salt & paprika. Roast on 425 for 20 min on parchment paper.

Minimize 1 russet potato into chunks. Boil water. Drop potato chunks in and boil till fork tender (15 dish min).

Saute diced onion & garlic in a big pot. Season w salt, peps, & turmeric. Add three cups veggie broth (I added WAY an excessive amount of to my soup—oops). Carry to a boil and simmer 5 min.

Add carrots and potatoes to soup. Additionally add 1 cup coconut milk. Now mix utilizing a handheld blender OR simply pour every little thing into a conventional blender and mix it that means till clean.

Garnish w contemporary parsley and some little roasted carrot items!!! This was VERY YUMMY and I’ll make it once more!!!
