Portuguese Kale Soup!

Start w a big pot and olive oil. Sauté 1 diced yellow onion and some cups of chopped potatoes for five min. Season w salt and pepper.

Add a number of sausage hyperlinks… linguica is right however I used andouille sausage. Chorizo can be advantageous. The sausage needs to be sliced into skinny rounds. Sauté for an additional couple minutes.

Add garlic, 6-Eight cups hen broth, 1 can drained white beans (navy, chickpea, something is okay), 1 can tomatoes, and a bay leaf. Carry to a boil then simmer till the potatoes are tender (20 minutes or so).

Add a number of big handfuls of kale and simmer for a number of extra minutes. Serve with yummy bread!!!
