Minestrone is considered one of my favourite soups! I like to sometimes combine in a vegetarian meal when potential… However it doesn’t occur typically, LOL.

Start with cube yellow onion, shopped celery, and chopped carrots in a big pot with olive oil. Season with minced garlic, salt, and pepper. Add 1+ tbsps tomato paste as soon as the veggies start to good. Stir effectively and let the tomato paste caramelize.

Add 3-5 cups vegetable broth, 1 giant can of crushed tomatoes, and a cup of water. Additionally add recent herbs, akin to basil and thyme.

Add your alternative of greens. I used zucchini on this. Mushrooms can be nice too! Carry to a boil.

Cut back to a simmer and add about 1 cup of raw pasta. Simmer for 10 minutes.

After the simmer, add your alternative of white beans (I used chickpeas), and kale (or spinach). Take the soup off the warmth and simply let the kale wilt within the soup. Add water if the pasta absorbed an excessive amount of of the liquid!
