Mild Rooster Florentine!! Historically, Rooster Florentine can be a lot creamier than this however I went w a thin model. It was stellar!

Season hen breast w salt & pep. Coat in flower. In a big skillet, sear hen in highly regarded olive oil. Get a superb sear on either side & prepare dinner through. As soon as cooked, put aside.

To that very same pan, add 2 tbsp butter, garlic, salt and peps. Add mushrooms (elective) and diced yellow onion or shallots. Sauté till tender.

Add 1 cup white wine. Simmer for 5-10 min & let the wine start to evaporate. Add 1 cup milk (or heavy cream). Simmer 5-10 min.

Add just a few handfuls of spinach. Stir and let the spinach wilt. Slice up hen breast and add it to the sauce!! Serve alone or with rice!!
