What you want: Quinoa, canned or frozen corn, canned black beans, canned or recent cube tomatoes, hen broth (could possibly be substituted for water), taco seasoning, massive pot or skillet (skillet most popular) with a canopy.

To a big skillet or pot, add 2 cans of black beans (strained and rinsed), 2 cans of corn (strained and rinsed), 2 cans of diced tomatoes, 2 cups quinoa, three cups hen broth (or water), and taco seasoning.

Carry to a boil, then simmer for about 15 minutes or till liquid has principally evaporated.

Serve with lime, avo, cilantro, and so forth!!!
