I didn’t even intend to take a pic of those… however after I noticed how fairly they had been, I needed to!! 😋😋 Roasted veggies and quinoa, topped with feta for meal prep this week!

Candy potatoes are seasoned with paprika, salt and pepper (bake 425 for 35-40 min). Brussies are seasoned with balsamic, salt, and pepper (bake 425 for 30 min). Crimson onions are seasoned with salt and pepper (bake 425 for 20 min). Tomatoes are seasoned with salt and pepper (bake 425 for 10 min).

Serve with quinoa and high with feta or tahini!!
