Preheat oven to 400. Lower peppers in half lengthwise, then hole out the seeds. Place the hollowed out peppers within the oven for about 12-15 minutes, to melt them.

Combine collectively the ing: Shredded hen, quinoa, shredded mozzarella, marinara, and arugula. That is your filling.

Take the peppers out of the oven and stuff them with the filling, together with shredded moz and Parmesan cheese. Pop them again within the oven for an additional 10 min—broil for final 2 min.
