Hen Enchiladas!!! You too can make these vegetarian or with beef, turkey, or shrimp.

Place rooster (I used 5 boneless skinless chix thighs—breasts are wonderful too) & 2 tbsp taco seasoning within the crockpot and prepare dinner on excessive for four hours—2 hours in, add 1 diced yellow onion and a couple of diced bell peppers (I used 1 crimson & 1 inexperienced). [If you don’t have 4 hours to spare—bring water to a boil, drop chix in and simmer for 45 min on low then shred & sauté veggies separate].

As soon as cooked, shred the rooster and place the rooster & veggies into a big bowl. To that bowl, add 2-Three mashed candy potatoes (microwave, bake, or boil—then mash), 1 cup black beans, 1 cup corn, 1/2-1 cup shredded Mexican cheese & 1/2-1 cup enchilada sauce. Combine nicely to mix.

Roll the filling evenly into 10 flour tortillas, lining them up in a baking pan. Pour 2ish cups enchilada sauce over the wrap-ups, and prime with Mexican cheese.

Bake on 400 for 25 min! Garnish with cilantro! THESE ARE AMAZING!!
