Eggplant & Quinoa “lasagna” really easy and satisfying, but fairly wholesome!!

Prepare dinner about 1.5 cups of dry quinoa. Slice 2 medium eggplants into half of inch thick rounds.

In a big casserole dish, start your layers… That is assembled like a lasagna. First, a layer of marinara on the underside of the pan. Subsequent, a layer of eggplant rounds. Subsequent, skinny layer of quinoa. Then a layer of shredded mozzarella. Repeat, 2 extra occasions, ending with mozzarella & parmesan on prime.

Bake on 400 for 45 minutes and revel in!!!!!!!
