MY BOLOGNESE: Start by finely dicing up 1 yellow onion, a pair massive carrots, and some celery stalks. Season w salt, pep, garlic. Sautee in a big pot till tender. To the identical pot, add 1lb floor beef, season w salt and pep, and cook dinner till completed. Add about 1 cup crimson wine, 2 cans tomato sauce and a bay leaf. Simmer on low for 1.5-2 hours (or alllll dayyyy). Add a giant splash of balsamic, recent parsley, and recent basil. Cook dinner one other 5 minutes.

Put just a few cups of Bolognese, half of field cooked pasta, and 1 massive diced eggplant, and 1 cups mozzarella in a big casserole dish. Combine properly to mix. High with further moz and bake on 425 for 20 minutes.
